SPECK

Italian speck is a type of cured meat similar to prosciutto but with a distinctive flavor. This dry cured ham is rubbed with spices such as salt, black pepper, and other traditional spices, then left to cure for three weeks. After the curing process, the meat is gently smoked with wood at a carefully controlled low temperature, which helps it retain its characteristic sweet flavor. Then aged in an air cooled room for approximately 6 months which produces an earthy flavor with a tender meaty texture.
